Finally got to make those pancakes I was whining about. It was like eating a sweet, lemon-flavored cloud.
Recipe | Fluffy, Amazing Lemon Pancakes
(makes 8 large cakes)
- 2 cups flour
- 3/4 tsp lemon zest
- 1 tbsp baking powder
- 1 tsp salt
- 1 tbsp sugar (double if you like them sweeter)
- 1/4 tsp baking soda
- 1/3 cup vegetable oil
- 2 cups milk
- 2 egg yolks (reserve whites for beating)
- 1 tbsp lemon juice (double if you like them tart)
Wisk together above ingredients until smooth.
Then beat the 2 egg whites until stiff peaks form, then gently fold egg whites into batter until combined.
Cook on stovetop as normal.
